BASIL:


Garden Fresh Pasta


3 c broccoli florets
8 diced roma tomatoes
4 peeled & chopped garlic cloves
1/4 c finely chopped basil
3 tbls olive oil
salt to taste
black pepper to taste
1/2 c shredded parmesan cheese
1 lb. cooked bowtie pasta

Saute' broccoli, tomatoes, and garlic in the olive oil until broccoli is bright green. Add fresh basil and cook a few minutes more. Season with salt and pepper. Toss with bowtie pasta and sprinkle cheese over top! Serves 4.

Tomatoe Basil Salsa

1-28 oz can diced tomatoes
1/3 c chopped red onion
3 peeled and chopped garlic cloves
1 or 2 jalapeno peppers chopped
2 1/2 tbls olive oil
2 tbls balsamic vinegar
salt & pepper to taste

Combine all and refrigerate 1 hour before serving. Great with blue corn chips!
